I think it would be helpful to update on the basis of reference to codex and the fact that ‘gluten free’ does not mean ‘free of gluten’ and that gluten tolerance is on a continuum with some able to tolerate codex, and some not able to tolerate even 1ppm. The codex level is not actually understood by a lot of people new to gluten free living, and not widely/if even understood by doctors/clinicians.

The FDA regulations on “Gluten-free” are pretty relaxed. Since gluten free is a big selling point, the manufacturer is not going to disclose just what percentage of gluten free they are not, because the FDA does not require disclosure below a certain level.
Also, like all granola bars, KIND bars are candy bars. Brown sugar and sucrose syrup is the same as chocolate and caramel. It’s just starch coated in sugar to get you over the hump.
Lastly, 75% of breakfast foods are things you should definitely not eat as your first meal of the day, to start your engine. Pancakes, waffles, cereal, donuts, all garbage for the same reason. Pure starch with a sugar coating. Guaranteed to start you jonesing for that rush by lunch time. Breakfast is the most important meal of the day, and a balanced breakfast is essential to eating well throughout the day.

And nothing will help you face health issues, like being in good physical health. Lots of exercise, carefully planned meals, full of fresh produce, grilled fish and chicken.

Period. After cutting out several things that I would never have dreamed of affecting me, I lost weight and had more energy. Sometimes, I would wonder if maybe it wasn’t so bad or maybe I could get away with eating X or Y, only to try it and immediately regret it. For me, it is ANY grain — wheat, oat, etc. No corn. No rice. No sugar. No sweeteners, natural or artificial. Just sticking to (as Gluten Dude says) — whole foods — unprocessed chicken or fish, vegetables (mostly green — I can’t do potatoes), and fruit. Yeah — some people are horrified and tell me I must be able to eat other things. They can’t wrap their heads around it and think I’m being extreme. But everyone is different. What works for them is great — but it doesn’t work for me. The less ingredients, the better.

I have noticed foods that contain the ingredient “natural flavors” also upset my stomach. If you are like me, try cutting out foods that have this in their ingredient list. I did some research and natural flavoring (whether it’s gluten free or not) could be creating your digestive/stomach issues.

Reading this for the first time and it makes me sooooo angry, being diagnosed a couple years ago, and no one telling me about Paleo or whole 30. I too, got the “gluten free” speech and was sent on my way and couldn’t figure out why I still felt awful and gained weight and was bloated all the time. When I told my PCP I saw a nutritionist and was doing Paleo she said it was “unnecessary”!!! She almost seemed to be insulted I went to a nutritionist and inferred I was wasting my money!! Needless to say, for the first time since I can remember I feel like a normal human again!! The medical community needs to get their shit together when it comes to this subject!!! Imagine all of the people walking around feeling horrible just because they are doing what their doctor told them to do!!!
